Vinnie Mae Humes' Chicken Enchiladas

Ingredients

  1. 1 can (5 oz.) chicken
  2. 2 cans (12 oz.) cream of chicken soup, low-fat
  3. onion, chopped
  4. 8 ounces cheese, grated
  5. 1 can non-fat evaporated milk
  6. 1/2 cup hot sauce
  7. 12 tortillas

Directions

Preheat oven to 375°
  1. Mix chicken, soup, milk, onion and hot sauce in a bowl.
  2. Pour 1/4 of the chicken mixture into a casserole dish sprayed with a non-stick cooking spray.
  3. Place first layer of tortillas on top of the mixture in the casserole dish.
  4. Continue to layer chicken mixture and tortillas.
  5. Cover with grated cheese.
  6. Baked for 45 minutes in preheated oven. 
This meal is prepared quickly but keeps family lingering around the supper table.
