Ingredients
- 1 pound ground beef
- 2 cups onions, diced
- 6 cups water
- 2 cans (14.5 oz) diced tomatoes, low-sodium
- 6 cups red skinned potatoes, cubed
- 1 cup corn, whole kernel, drained and rinsed
- 1 cup yellow squash, diced
- 1 cup zucchini, diced
- 1 can (15.5 oz) kidney beans, drained and rinsed
- 1 can (15.5 oz) black-eyed peas, drained and rinsed
- 1/2 cup quick cooking barley
- 4 garlic cloves, minced
- 1 1/2 teaspoons black pepper
Directions
1. In a skillet over medium-high heat, brown ground beef and onions.
2. Rinse and drain meat.
3. In a large stock pot, add all ingredients.
4. Bring to a boil, then lower heat and simmer 30-35 minutes or until potatoes are soft.
5. Serve immediately.
