Ingredients

  1. 1 pound ground beef
  2. 2 cups onions, diced
  3. 6 cups water
  4. 2 cans (14.5 oz) diced tomatoes, low-sodium
  5. 6 cups red skinned potatoes, cubed
  6. 1 cup corn, whole kernel, drained and rinsed
  7. 1 cup yellow squash, diced
  8. 1 cup zucchini, diced
  9. 1 can (15.5 oz) kidney beans, drained and rinsed
  10. 1 can (15.5 oz) black-eyed peas, drained and rinsed
  11. 1/2 cup quick cooking barley
  12. garlic cloves, minced
  13. 1 1/2 teaspoons black pepper

Directions

1. In a skillet over medium-high heat, brown ground beef and onions.
2. Rinse and drain meat.
3. In a large stock pot, add all ingredients.
4. Bring to a boil, then lower heat and simmer 30-35 minutes or until potatoes are soft.
5. Serve immediately.
May use chicken or roast for this stew. Stew freezes well.
