Ingredients
- 1 can whole kernel corn, reduced-sodium, drained and rinsed
- 1 can cream style corn, reduced-sodium
- 1 can non-fat evaporated milk
- 1/4 cup egg mix (no water added)
- 1 cup onion, chopped
- 2 tablespoons buttery spread
- 1 cup unsalted top crackers, crushed
- 1 1/2 cups (6 oz) cheese, shredded
- 1/4 teaspoon black pepper
Directions
Preheat oven to 350°
- Spray an 8 x 8 inch baking dish with non-stick cooking spray.
- Combine all ingredients in baking dish; mix well.
- Bake for 1 hour, or until top is brown and crispy.
You can add chopped jalapenos or green chilies for some spicy flavor.
