Ingredients

  1. 1 can whole kernel corn, reduced-sodium, drained and rinsed
  2. 1 can cream style corn, reduced-sodium
  3. 1 can non-fat evaporated milk
  4. 1/4 cup egg mix (no water added)
  5. 1 cup onion, chopped
  6. 2 tablespoons buttery spread
  7. 1 cup unsalted top crackers, crushed
  8. 1 1/2 cups (6 oz) cheese, shredded
  9. 1/4 teaspoon black pepper

Directions

Preheat oven to 350°
  1. Spray an 8 x 8 inch baking dish with non-stick cooking spray.
  2. Combine all ingredients in baking dish; mix well.
  3. Bake for 1 hour, or until top is brown and crispy.
You can add chopped jalapenos or green chilies for some spicy flavor.
