Ingredients

  1. roasting chicken (whole, not cut-up)
  2. 1 tablsepoon salt-free seasoning mix*
  3. 2 teaspoons vegetable oil
  4. 1/4 teaspoon orange peel, grated

Directions

Preheat oven to 375°
  1. Place chicken on a rack in shallow roasting pan. 
  2. Carefully loosen skin above the breast meat and rub half of the spice mixture and orange peel under the loosened skin. 
  3. Rub the chicken with oil and remaining spice mixture. 
  4. Bake 1 1/2-2 hours.
