Ingredients
- 1 cup vegetable oil
- 2 cups sugar
- 1/2 cup egg mix combined with 1 cup water
- 1 teaspoon vanilla extract
- 1 1/3 cups buttermilk
- 1 1/3 cups stewed prunes, chopped
- 2 1/3 cups flour
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup peanuts, chopped
Directions
Preheat oven to 350°
- In a large bowl, mix oil and sugar until smooth.
- Mix in egg mixture, vanilla and prunes.
- Sift flour, allspice, nutmeg, cinnamon, baking powder and baking soda into a large bowl.
- Stir in the dry ingredients 1/3 at a time, alternating with the buttermilk.
- Mix in the nuts.
- Pour batter into a pan sprayed with non-stick cooking spray and sprinkled with flour to prevent sticking.
- Bake for 50 minutes or until a toothpick inserted in the center of the cake comes out clean.
