Ingredients

  1. 1 cup vegetable oil
  2. 2 cups sugar
  3. 1/2 cup egg mix combined with 1 cup water
  4. 1 teaspoon vanilla extract
  5. 1 1/3 cups buttermilk
  6. 1 1/3 cups stewed prunes, chopped
  7. 2 1/3 cups flour
  8. 1 teaspoon allspice
  9. 1 teaspoon nutmeg
  10. 1 teaspoon cinnamon
  11. 1 teaspoon baking powder
  12. 1 teaspoon baking soda
  13. 1 cup peanuts, chopped

Directions

Preheat oven to 350°
  1. In a large bowl, mix oil and sugar until smooth.
  2. Mix in egg mixture, vanilla and prunes.
  3. Sift flour, allspice, nutmeg, cinnamon, baking powder and baking soda into a large bowl.
  4. Stir in the dry ingredients 1/3 at a time, alternating with the buttermilk.
  5. Mix in the nuts.
  6. Pour batter into a pan sprayed with non-stick cooking spray and sprinkled with flour to prevent sticking.
  7. Bake for 50 minutes or until a toothpick inserted in the center of the cake comes out clean.
