Ingredients
- 2 pounds ground beef
- 1/3 cup green bell pepper, finely chopped
- 1/3 cup onion, finely chopped
- 1/4 cup egg mix combined with 1/2 cup water
- 1 1/2 cups unsalted top crackers, crushed
- 1/4 teaspoon pepper
- 2 cans (10.75 oz) low-sodium mushroom soup
- 1 cup fresh mushrooms, sliced
- 1 cup non-fat sour cream
- 1/2 cup skim or one percent milk
Directions
Preheat oven to 375°
- In a large mixing bowl, combine ground beef, green pepper, onion, egg mixture, cracker crumbs and pepper.
- Mix thoroughly.
- Shape the meat mixture into 2-inch meatballs.
- Place 1 inch apart on a shallow baking sheet.
- Bake 30 minutes.
- While meatballs are baking, make the sauce in a 9 x 13 inch pan. Start with mixing the soup, mushrooms, sour cream, milk and pepper. Mix well.
- When the meatballs are finished baking, remove from the oven. Place meatballs in the sauce in the 9 x 13 inch pan. Stir to coat.
- Return to the oven and bake 20-30 minutes.
Use low-sodium mushroom soup to reduce the sodium.
