Smothered Meatballs

Ingredients

  1. 2 pounds ground beef
  2. 1/3 cup green bell pepper, finely chopped
  3. 1/3 cup onion, finely chopped
  4. 1/4 cup egg mix combined with 1/2 cup water
  5. 1 1/2 cups unsalted top crackers, crushed
  6. 1/4 teaspoon pepper
  7. 2 cans (10.75 oz) low-sodium mushroom soup
  8. 1 cup fresh mushrooms, sliced
  9. 1 cup non-fat sour cream
  10. 1/2 cup skim or one percent milk

Directions

Preheat oven to 375°
  1. In a large mixing bowl, combine ground beef, green pepper, onion, egg mixture, cracker crumbs and pepper.
  2. Mix thoroughly.
  3. Shape the meat mixture into 2-inch meatballs.
  4. Place 1 inch apart on a shallow baking sheet.
  5. Bake 30 minutes.
  6. While meatballs are baking, make the sauce in a 9 x 13 inch pan.  Start with mixing the soup, mushrooms, sour cream, milk and pepper.  Mix well.
  7. When the meatballs are finished baking, remove from the oven.  Place meatballs in the sauce in the 9 x 13 inch pan.  Stir to coat. 
  8. Return to the oven and bake 20-30 minutes.
Use low-sodium mushroom soup to reduce the sodium.
