Ingredients
- 3 cans peaches, no sugar added
- 3 tablespoons lemon juice
- 1 1/2 teaspoons vanilla
Directions
- Place unopened cans of peaches in freezer for 8 hours or until solid.
- Place unopened cans in a hot water bath for 1 minute.
- Open each can and pour any thawed juice into a food processor or blender.
- Add lemon juice and vanilla.
- Remove fruit from each can, and carefully cut into chunks.
- Place frozen fruit in food processor or blender, and process until smooth.
- Serve or freeze until ready to serve.
Try other canned fruit such as apricots or mixed fruit.
Depending on equipment, processing may need to be done in two batches.
