4 (1/2 apple) servings

Ingredients

  1. 2 tablespoons buttery spread
  2. large Granny Smith apples, washed, cored and chopped
  3. 1 teaspoon cornstarch
  4. 1/4 cup cold water
  5. 1/4 cup brown sugar
  6. 1/4 teaspoon ground cinnamon

Directions

  1. In a large skillet or saucepan, melt buttery spread over medium heat, add apples.
  2. Cook stirring constantly, until apples are almost tender, about 6-7 minutes.
  3. Dissolve cornstarch in water, add to skillet.
  4. Stir in brown sugar and cinnamon.
  5. Boil for 2 minutes, stirring occasionally.
  6. Remove from heat and serve warm.
Serve over whole wheat pancakes or with fruit yogurt. Leaving the peel on the apples will increase fiber.

"They were great as a side dish with our baked chicken."
