Roasted Cauliflower

Ingredients

  1. 1 large cauliflower, cut into florets (about 8 cups)
  2. 1/8 teaspoon black pepper
  3. 4 tablespoons buttery spread
  4. 1/3 cup peanuts
  5. garlic clove, minced
  6. 1/2 cup prunes, pitted, coarsely chopped

Directions

Preheat oven to 425°
  1. Spread cauliflower evenly on a baking sheet and season with pepper. 
  2. Transfer to oven and roast about 20 minutes, tossing once with spatula until golden brown at the edges. 
  3. Melt buttery spread in skillet, and add peanuts. Cook until browned. 
  4. Add garlic and prunes. Cook until soft. 
  5. Drizzle nut mixture over cauliflower and serve. 
Goes great with the Sunday Roasted Chicken recipe.
