Ingredients
- 1 large cauliflower, cut into florets (about 8 cups)
- 1/8 teaspoon black pepper
- 4 tablespoons buttery spread
- 1/3 cup peanuts
- 1 garlic clove, minced
- 1/2 cup prunes, pitted, coarsely chopped
Directions
Preheat oven to 425°
- Spread cauliflower evenly on a baking sheet and season with pepper.
- Transfer to oven and roast about 20 minutes, tossing once with spatula until golden brown at the edges.
- Melt buttery spread in skillet, and add peanuts. Cook until browned.
- Add garlic and prunes. Cook until soft.
- Drizzle nut mixture over cauliflower and serve.
Goes great with the Sunday Roasted Chicken recipe.
