Ingredients
- 1 cup brown sugar, divided
- 1/2 cup buttery spread
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 3/4 cup oats
- 1/4 cup egg mix combined with 1/2 cup water
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 3/4 cup raisins
- 1/2 cup flaked coconut
- 1/2 cup dried cherries
Directions
Preheat oven to 350°
- In a medium bowl, mix together 1/2 cup brown sugar, buttery spread, all-purpose flour and oats.
- Press in the bottom of an 8 x 8 inch square pan. Bake crust for 20 minutes.
- In the same bowl, mix together egg mixture, 1/2 cup brown sugar, whole wheat flour, baking powder and vanilla extract until well blended. Stir in the raisins, coconut and cherries. Spread this over baked crust in the pan.
- Bake for 30 minutes. Cool and then cut into bars.
Substitute fresh pitted prunes for dried cherries.
