Ingredients
- 1 graham cracker square
- 1/4 cup skim or one percent milk
- 1 tablespoon instant vanilla pudding mix, sugar-free
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 2 tablespoons pumpkin, canned
- whipped topping, optional
Directions
- Place graham cracker in a small plastic bag and seal it.
- Crush graham cracker into small crumbs, then pour crumbs into a small cup.
- In a plastic freezer bag, add milk, instant pudding and spices.
- Remove air from bag and seal it.
- Squeeze and knead bag with hands.
- Add 2 tablespoons pumpkin and mix well.
- Push contents of bag to one corner, then snip off corner and squeeze contents into cup over graham cracker crumbs.
- Top with whipped topping if desired.
This is a great substitute for a higher calorie piece of pie.
