Potato Bake Casserole

Ingredients

  1. potatoes, peeled and cubed or diced
  2. small onion, chopped
  3. 1 1/2 cups non-fat cottage cheese
  4. 1 cup non-fat sour cream
  5. 1 cup cheese, shredded

Directions

Preheat oven to 350°
  1. Place potatoes in a large pot of water and boil until tender when pierced with a fork.
  2. In a large mixing bowl, combine potatoes, onion, cottage cheese and sour cream.
  3. Place in an 8 x 8 inch casserole dish sprayed with non-stick cooking spray.
  4. Bake for 35-40 minutes. 
Add one can low-sodium mixed vegetables for more nutrients and color.
