Ingredients
- 5 potatoes, peeled and cubed or diced
- 1 small onion, chopped
- 1 1/2 cups non-fat cottage cheese
- 1 cup non-fat sour cream
- 1 cup cheese, shredded
Directions
Preheat oven to 350°
- Place potatoes in a large pot of water and boil until tender when pierced with a fork.
- In a large mixing bowl, combine potatoes, onion, cottage cheese and sour cream.
- Place in an 8 x 8 inch casserole dish sprayed with non-stick cooking spray.
- Bake for 35-40 minutes.
Add one can low-sodium mixed vegetables for more nutrients and color.
