Porcupine Meatballs

Ingredients

  1. 2 tablespoons egg mix combined with 1/4 cup water
  2. 1/2 cup rice, cooked
  3. 1 can reduced-sodium diced tomatoes
  4. 1/2 onion, finely chopped
  5. 1/2 bell pepper, chopped
  6. 1/4 teaspoon pepper
  7. 1 pound ground beef
  8. 1 teaspoon Worcestershire sauce
  9. 1 tablespoon buttery spread
  10. 1 tablespoon garlic powder
  11. 1 can spaghetti sauce

Directions

  1. In a bowl, combine the egg mixture, rice, onion, and pepper.
  2. Mix in the beef with the egg mixture.
  3. Shape into 2-inch balls.
  4. Combine the spaghetti sauce and Worcestershire sauce, pour over meatballs.
  5. Cook in a large pan, covered, over medium heat for 30 minutes.
Why not make extra meatballs to freeze; they make a great sandwich for a grab and go dinner.
