Peach & Blackberry Cobbler

Ingredients

  1. 1/4 cup buttery spread, melted
  2. 3 cups fresh peaches, sliced
  3. 2 cups fresh blackberries
  4. 1 cup flour
  5. 1 cup sugar
  6. 1/4 teaspoon ground ginger
  7. 1 tablespoon baking powder
  8. 1 cup skim or one percent milk

Directions

Preheat oven to 350°
  1. In a bowl, combine peaches, blackberries and 1 tablespoon sugar, tossing gently.
  2. Coat a 9 x 13 inch pan with non-stick cooking spray and pour in 2 tablespoons buttery spread.
  3. Pour peach mixture into prepared dish.
  4. Combine 1 cup flour, remaining sugar and baking powder into a bowl.
  5. Stir while adding remaining 2 tablespoons buttery spread and milk.
  6. Pour batter over fruit mixture.
  7. Bake 1 hour or until golden brown.
