Pan Shortcake & Whipped Topping

Ingredients

  1. 2 1/3 cups bakery mix
  2. 3 tablespoons sugar
  3. 1/2 cup unsweetened applesauce
  4. 1/2 cup prepared instant non-fat dry milk
  5. 3 1/2 cups cold, ice water
  6. 1/2 cup instant non-fat dry milk
  7. 1/2 cup sugar
  8. 2 tablespoons lemon juice

Directions

Shortcake
Preheat oven to 400°
  1. Mix all ingredients until well moistened. 
  2. Drop into ungreased muffin tins.
  3. Bake 15-20 minutes.

Whipped Topping
  1. Pour water into an ice cold bowl. 
  2. Add milk and beat with a cold egg beater until stiff.
  3. Slowly add sugar while continuing to beat.
  4. Add lemon juice and beat until well mixed. 
This shortcake is delicious topped with any fruit. "Very pretty."

Be sure to refrigerate whipped topping until ready to use. "Goes great served with fresh fruit."
