Oatmeal Raisin Cookies

Ingredients

  1. 1/2 cup vegetable oil
  2. 1 cup light brown sugar
  3. 2 tablespoons egg mix combined with 1/4 cup water
  4. 1 cup flour
  5. 1/2 cup non-fat dry milk
  6. 2 teaspoons baking powder
  7. 1/4 teaspoon ground cinnamon
  8. 1/4 cup water
  9. 1/2 teaspoon vanilla
  10. 2 cups oats
  11. 1/2 cup raisins

Directions

Preheat oven to 375°
  1. In a large mixing bowl, beat together vegetable oil and brown sugar. Add egg mixture and continue to beat until smooth and creamy.
  2. Add flour, dry milk, baking powder and cinnamon. Mix well. Stir in vanilla and water. Add oats and raisins. Mix well. 
  3. Drop by small spoonfuls onto a baking sheet lightly sprayed with non-stick cooking spray.
  4. Bake for about 12-15 minutes or until lightly browned.
Great with a cold cup of skim or one percent milk.
