Oatmeal Muffins

Ingredients

  1. 1 cup low-fat bakery mix
  2. 1/2 cup crushed corn or oat cereal
  3. 1 1/2 cups oats
  4. 1/2 cup sugar
  5. 2 teaspoons cinnamon
  6. 2 tablespoons egg mix combined with 1/4 cup water
  7. 2 tablespoons vegetable oil
  8. 2 tablespoons applesauce
  9. 1/2 cup skim or one percent milk

Directions

Preheat oven to 375°
  1. In a large bowl, add bakery mix, cereal, oats, sugar and cinnamon.  Mix well.
  2. Stir in egg mixture, oil, applesauce and milk until lightly mixed (batter will be lumpy).
  3. Spoon batter into prepared muffin pan coated with non-stick cooking spray.
  4. Bake for 20-25 minutes or until muffins are browned.
