Ingredients
- 1 cup low-fat bakery mix
- 1/2 cup crushed corn or oat cereal
- 1 1/2 cups oats
- 1/2 cup sugar
- 2 teaspoons cinnamon
- 2 tablespoons egg mix combined with 1/4 cup water
- 2 tablespoons vegetable oil
- 2 tablespoons applesauce
- 1/2 cup skim or one percent milk
Directions
Preheat oven to 375°
- In a large bowl, add bakery mix, cereal, oats, sugar and cinnamon. Mix well.
- Stir in egg mixture, oil, applesauce and milk until lightly mixed (batter will be lumpy).
- Spoon batter into prepared muffin pan coated with non-stick cooking spray.
- Bake for 20-25 minutes or until muffins are browned.
