Ingredients
- 1 pound fresh asparagus, steamed for about 5 minutes and then chilled
- 1/2 cup peanuts, chopped
- 2 oranges, peeled and separated into sections
- 3 cups romaine lettuce
- 2 tablespoons vegetable oil
- 2 tablespoons vinegar
- 2 tablespoons orange juice
- 2 teaspoons sugar
- pepper to taste
Directions
- Cut the cooked asparagus into 1-inch pieces.
- Place into a bowl and add the nuts, oranges and salad greens.
- In a small bowl, combine all the other ingredients and mix well.
- Add liquid dressing to salad and toss to coat.
Try substituting grapefruit for the oranges in this recipe.
