Mexican Goulash

Ingredients

  1. 1 pound ground beef
  2. 1 can pinto beans, drained and rinsed
  3. 1 can black beans, drained and rinsed
  4. 1 can whole kernel corn, low-sodium, drained and rinsed
  5. 1/2 can tomato sauce, low-sodium
  6. 1/4 cup onion, chopped
  7. 2 cans diced, low-sodium, tomatoes
  8. 1 1/4 cups macaroni, uncooked
  9. 2 cups water
  10. 1/4 teaspoon chili powder
  11. pepper to taste

Directions

  1. In a large skillet, brown ground beef and onion.  Drain fat. 
  2. Add tomatoes, corn, macaroni, pepper, beans, tomato sauce and chili powder.
  3. Cover and simmer about 20 minutes or until macaroni is tender.
