Meatloaf

Makes 6 servings

Ingredients

  1. 1 pound ground beef
  2. 1 cup oats
  3. 2 tablespoons egg mix (no water added)
  4. 1/2 cup onion, chopped
  5. 1 can tomato sauce, low-sodium, divided

Directions

  1. Combine beef, oats, egg mixture, onion, and half the can of tomato sauce.  Mix well.
  2. Shape into a loaf and place in a pan sprayed with non-stick cooking spray. Cover with the remaining half can of tomato sauce.
  3. Bake for 1 hour. 
Use leftover meatloaf to make a sandwich or add to spaghetti sauce.
