Ingredients
- 4 - 5 medium potatoes (about 2 pounds)
- 2 tablespoons buttery spread
- 1/2 cup skim or one percent milk
- black pepper to taste
Directions
- Wash potatoes. Peel or leave on peel for more dietary fiber. Cut into big pieces.
- Cover potatoes with water in a saucepan. Bring to a boil.
- Reduce heat and let simmer for 15-25 minutes until potatoes are tender. Drain.
- Mash potatoes lightly with a fork. Add buttery spread, milk and pepper.
Potatoes are considered a starch, so limit your starches by choosing other vegetables more often.
