Ingredients
- 1 pound dried mixed beans*
- 8 cups water
- 1 cup celery, chopped
- 1 cup onion, chopped
- 1 1/2 cups carrots, chopped
- 1/4 teaspoon dried thyme
- 1 bay leaf
Directions
- Sort and rinse beans. Soak in water 8 hours or overnight. Drain and rinse well in cool water. Place in large saucepan.
- Add all other ingredients. Cover and bring to a boil.
- Reduce heat and simmer for 1 1/2 -2 hours or until beans are tender. Stir while cooking.
Soak your beans Friday night and preparing this dish becomes quick and easy.
Serve with cornbread muffins to warm up a chilly day!
