How Ya Bean? Soup

Ingredients

  1. 1 pound dried mixed beans*
  2. 8 cups water
  3. 1 cup celery, chopped
  4. 1 cup onion, chopped
  5. 1 1/2 cups carrots, chopped
  6. 1/4 teaspoon dried thyme
  7. bay leaf

Directions

  1. Sort and rinse beans. Soak in water 8 hours or overnight. Drain and rinse well in cool water. Place in large saucepan.
  2. Add all other ingredients. Cover and bring to a boil. 
  3. Reduce heat and simmer for 1 1/2 -2 hours or until beans are tender. Stir while cooking.
Soak your beans Friday night and preparing this dish becomes quick and easy.

Serve with cornbread muffins to warm up a chilly day!
