Ingredients
- 2 ears corn
- 3 cups cabbage, shredded
- 2 medium zucchini, chopped
- 3 medium banana peppers, chopped
- 1 large onion, chopped
- 1 tablespoon, 2 teaspoons vegetable oil
- 2 tablespoons water
- 1/8 teaspoon red pepper flakes
- 3 large tomatoes, peeled and chopped
- 1/8 teaspoon black pepper
Directions
- Cut corn kernels from cobs; place in a large bowl.
- Add cabbage, zucchini, banana peppers and onion.
- Heat oil in skillet, and add vegetables.
- Cook and stir 5 minutes.
- Add water and red pepper flakes.
- Cover; simmer over low heat for 15-20 minutes or until vegetables are tender.
- Stir in tomatoes and black pepper.
- Cook and stir 1 more minute.
Use canned whole kernel corn, drained and rinsed, as a substitute for corn-on-the-cob.
