Garden Vegetable Mix-Up

Ingredients

  1. 2 ears corn
  2. 3 cups cabbage, shredded
  3. medium zucchini, chopped
  4. medium banana peppers, chopped
  5. large onion, chopped
  6. 1 tablespoon, 2 teaspoons vegetable oil
  7. 2 tablespoons water
  8. 1/8 teaspoon red pepper flakes
  9. large tomatoes, peeled and chopped
  10. 1/8 teaspoon black pepper

Directions

  1. Cut corn kernels from cobs; place in a large bowl.
  2. Add cabbage, zucchini, banana peppers and onion.
  3. Heat oil in skillet, and add vegetables. 
  4. Cook and stir 5 minutes.
  5. Add water and red pepper flakes. 
  6. Cover; simmer over low heat for 15-20 minutes or until vegetables are tender.
  7. Stir in tomatoes and black pepper. 
  8. Cook and stir 1 more minute. 

 
Use canned whole kernel corn, drained and rinsed, as a substitute for corn-on-the-cob.
