Easy Dinner Wheat Rolls

Ingredients

  1. 1/4 cup vegetable oil
  2. 2 tablespoons sugar
  3. 1 1/2 teaspoons salt
  4. 1 cup boiling water
  5. 1 package (.25 oz) active dry yeast
  6. 2 tablespoons and 2 teaspoons warm water
  7. 2 tablespoons egg mix combined with 1/4 cup water
  8. 1 cup whole wheat flour
  9. 2 cups self-rising flour*

Directions

Preheat oven to 350° after covering rolls to let them rise
  1. In a small bowl, combine vegetable oil, sugar and salt.  Add boiling water and stir to dissolve sugar, let cool to lukewarm.
  2. In a small bowl, dissolve yeast in warm water.  Let stand until creamy, about 10 minutes.
  3. When sugar and water mixture has cooled, add yeast mixture, egg mixture, whole wheat flour and 1/2 cup flour.
  4. Stir in the remaining flour a small amount at a time, beating well after each addition.  When the dough has pulled together, place onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  5. Divide dough into small equal pieces and form into rounds.  Place the rounds on lightly greased baking sheets.  Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes.
  6. Bake in preheated oven until golden brown, about 15-20 minutes.
*If you don't have self-rising flour, you can make your own by combining 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/2 teaspoon salt.

Make enough to freeze for later.
