Don't Kiss and Tell Garlic Bean Soup

Ingredients

  1. 3 cups Great Northern Beans, cooked
  2. 2 cups onion, chopped
  3. 1/2 cup celery, chopped
  4. 2 teaspoons garlic powder
  5. 2 tablespoons vegetable oil
  6. 2 cans (about 14 oz) low-sodium chicken broth
  7. 1 can reduced-sodium carrots, sliced and undrained
  8. 1/2 teaspoon pepper

Directions

  1. Cook onion, celery and garlic in vegetable oil for 3 to 4 minutes on medium heat.
  2. Add chicken broth and beans; heat to boiling.
  3. Reduce heat and simmer until celery is tender, about 6 minutes.
  4. Add canned carrots and pepper. Heat another 2 minutes.
Serve with cornbread for a meatless meal.

Great Northern Beans were used, but you can use many kinds of dried beans.
