Ingredients
- 8 new potatoes
- 1/2 cup yogurt, low-fat, plain
- 1 tablespoon horseradish
- 1/8 teaspoon dried whole dill weed
- 2 tablespons chives, fresh, chopped
Directions
- Rinse potatoes and pat dry.
- Prick potatoes several times with a fork.
- Place on a paper towel in microwave oven.
- Microwave on high for 6-7 minutes, turning over after 3 1/2 minutes. Let stand 5 minutes (increase the microwave time or adjust teh time to ensure they are done according to the wattage of your microwave).
- Cut potatoes in half lengthwise, set aside.
- In a small bowl, combine yogurt, horseradish and dill weed, and stir well.
- Spoon 1 teaspoon yogurt mixture onto each potato half.
- Sprinkle with chives.
Cut potatoes into quarters for smaller portions.
