Ingredients
- 8 cups cauliflower florets (approximately 1 head)
- 4 garlic cloves, crushed and peeled
- 1/3 cup non-fat buttermilk
- 2 teaspoons vegetable oil
- 1 teaspoon buttery spread
- 1/8 teaspoon black pepper
Directions
- Place cauliflower and garlic in a pan over boiling water. (This will create a steamer/double boiler.)
- Cover and steam until tender, 12-15 minutes.
- Place the cauliflower and garlic in a food processor.
- Add buttermilk, vegetable oil, buttery spread and pepper.
- Pulse several times, then process until smooth and creamy.
