Creamy Mashed Cauliflower

Ingredients

  1. 8 cups cauliflower florets (approximately 1 head)
  2. garlic cloves, crushed and peeled
  3. 1/3 cup non-fat buttermilk
  4. 2 teaspoons vegetable oil
  5. 1 teaspoon buttery spread
  6. 1/8 teaspoon black pepper

Directions

  1. Place cauliflower and garlic in a pan over boiling water. (This will create a steamer/double boiler.)
  2. Cover and steam until tender, 12-15 minutes.
  3. Place the cauliflower and garlic in a food processor.
  4. Add buttermilk, vegetable oil, buttery spread and pepper.
  5. Pulse several times, then process until smooth and creamy.
