Cornbread

Ingredients

  1. 1 cup cornmeal
  2. 1 cup flour
  3. 1/4 cup sugar
  4. 4 teaspoons baking powder
  5. 2 tablespoons egg mix combined with 1/4 cup water
  6. 1 cup skim or one percent milk
  7. 1/4 cup vegetable oil

Directions

Preheat oven to 400°
  1. In a medium bowl, combine cornmeal, flour, sugar and baking powder.  Mix well.
  2. In a small bowl, mix egg mixture, milk and vegetable oil.  Mix well.
  3. Combine egg mixture with flour mixture, stirring just until the dry ingredients are moistened.
  4. Pour batter into pan sprayed with non-stick cooking spray.
  5. Bake for 20-25 minutes or until golden brown.
Finish that stew off with some "hot out of the oven" cornbread.

Use muffin pans for a shorter baking time.
