Ingredients
- 1 cup cornmeal
- 1 cup flour
- 1/4 cup sugar
- 4 teaspoons baking powder
- 2 tablespoons egg mix combined with 1/4 cup water
- 1 cup skim or one percent milk
- 1/4 cup vegetable oil
Directions
Preheat oven to 400°
- In a medium bowl, combine cornmeal, flour, sugar and baking powder. Mix well.
- In a small bowl, mix egg mixture, milk and vegetable oil. Mix well.
- Combine egg mixture with flour mixture, stirring just until the dry ingredients are moistened.
- Pour batter into pan sprayed with non-stick cooking spray.
- Bake for 20-25 minutes or until golden brown.
Finish that stew off with some "hot out of the oven" cornbread.
Use muffin pans for a shorter baking time.
