Ingredients
- 2 medium cucumbers, quartered and thinly sliced
- 1 medium onion, chopped
- 1 bunch radishes, thinly sliced
- 3/4 cup light mayonnaise
- 1/2 cup ranch-style salad dressing
- Pepper to taste
Directions
- In a bowl, toss together cucumbers, onion and radishes.
- In a separate bowl, mix mayonnaise and ranch salad dressing. Season with pepper.
- Mix the dressing with the vegetables and toss to coat.
- Refrigerate to chill, about 2 hours.
You can add this salad to your hominy bake and have a bright crispy crunch and hot comfort food.
