Chili Hominy Bake

Ingredients

  1. 1 1/2 pounds ground beef
  2. 1/2 cup onion, chopped
  3. 1 can hominy, low sodium, drained
  4. 1 can diced tomatoes, low sodium
  5. 1 Tablespoon chili powder
  6. 2 Tablespoons flour
  7. 1 cup cheese, grated
  8. pepper to taste

Directions

Preheat oven to 375°
  1. In a large skillet, brown ground beef and onion until cooked thoroughly.  Drain well and rinse ground beef.
  2. Stir in tomatoes (including juice), drained hominy, chili powder, flour and pepper.  Mix well.
  3. Pour mixture into a 2-quart, oven-safe baking dish.  Bake for 20 minutes.
  4. Top with cheese and continue baking for 5 minutes or until cheese has melted. 
This hot filling dish will soon be a staple with the family.


While browning ground beef, brown extra ground beef for another night.
