Ingredients
- 2 kiwifruits, peeled and chopped
- 1 cup peaches, chopped
- 1/2 cup avocado, chopped
- 1 tablespoon lime juice
- 8 chicken pieces, skinned
- 1 tablespoon vegetable oil
- 1 green bell pepper, cut in strips
- 1 onion, chopped
- 1 jalapeno chile pepper, stemmed, seeded and cut into thin strips
- 2 garlic cloves, minced
- 1/4 cup fresh cilantro, snipped
Directions
- In a medium bowl, combine kiwi, peaches, avocado and lime juice. Cover and set aside.
- Sprinkle chicken with pepper.
- In a large non-stick skillet, heat oil over medium heat. Add chicken, and cook 8-10 minutes or until chicken is no longer pink.
- Remove chicken from skillet.
- Stir-fry vegetables, jalapeno pepper and garlic over medium heat 3 minutes or until heated through. Stir in cilantro.
- Divide stir-fry mixture onto 4 serving plates, then top each with a chicken piece. Spoon fruit salsa over chicken and serve.
When in season, substitute nectarines for peaches.
Serve on a bed of rice for a beautiful meal.
