Ingredients
- 1 large head of cauliflower
- 2 tablespoons lemon juice
- 1/3 cup buttery spread, melted
- 1/4 teaspoon dried basil
- 1 garlic clove, crushed
- 1 tablespoon fresh parsley, chopped, optional
Directions
- Remove large outer leaves of cauliflower. Rinse. Break into florets.
- Cover and cook in a small amount of boiling water 8-10 minutes or until tender.
- Arrange florets in a serving dish, and sprinkle with lemon juice.
- Combine buttery spread, basil, garlic and parsley.
- Pour herb butter over florets.
This cauliflower can be eaten hot or cold. Paired with some of yesterday's chicken it's perfect for a family on the go.
