Carrot Muffins

Ingredients

  1. 1 cup whole wheat flour
  2. 1 cup all-purpose flour
  3. 1 tablespoon baking powder
  4. 1/4 cup light brown sugar
  5. 1/2 teaspoon cinnamon
  6. 1/8 teaspoon allspice
  7. 1 cup carrots, finely grated
  8. 2 tablespoons egg mix combined with 1/4 cup water
  9. 1 cup skim or one percent milk
  10. 1/4 cup honey
  11. 1/4 cup buttery spread, melted
  12. 1/2 cup raisins

Directions

Preheat oven to 400°
  1. Mix flours and baking powder in a large bowl. Blend in brown sugar, cinnamon, allspice and grated carrots.
  2. Mix egg mixture with milk, honey and buttery spread. Add wet mixture to dry mixture until all ingredients are moistened.
  3. Add raisins.
  4. Spoon mixture into muffin tins sprayed with non-stick cooking spray, or use paper muffin liners.
  5. Bake 25-30 minutes.
Serve with a cold glass of skim or one percent milk.
