Ingredients

  1. 24 romaine lettuce leaves
  2. 2/3 cup low-calorie Caesar salad dressing
  3. 1/2 cucumber, chopped
  4. 1 1/4 cups seasoned croutons
  5. 1 cup cherry or grape tomatoes, halved
  6. 1/4 cup fresh parsley, chopped
  7. 1/8 teaspoon black pepper

Directions

  1. Separate lettuce leaves onto a platter.
  2. Spoon dressing lightly down center of each leaf.
  3. Top with cucumber, croutons, tomatoes and parsley.
  4. Sprinkle with black pepper and serve.
Makes a great appetizer or first course for a summer party or gathering.

If desired, dust with fresh grated Parmesan cheese.
