Ingredients
- 24 romaine lettuce leaves
- 2/3 cup low-calorie Caesar salad dressing
- 1/2 cucumber, chopped
- 1 1/4 cups seasoned croutons
- 1 cup cherry or grape tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/8 teaspoon black pepper
Directions
- Separate lettuce leaves onto a platter.
- Spoon dressing lightly down center of each leaf.
- Top with cucumber, croutons, tomatoes and parsley.
- Sprinkle with black pepper and serve.
Makes a great appetizer or first course for a summer party or gathering.
If desired, dust with fresh grated Parmesan cheese.
