Breakfast Frittata

Ingredients

  1. potatoes, peeled and cubed
  2. 1/2 onion, sliced
  3. 1 tablespoon vegetable oil
  4. 1 cup egg mix combined with 2 cups water
  5. 3/4 cup cubed ham
  6. 1 teaspoon pepper
  7. 3/4 cup cheese, shredded

Directions

  1. Cook potatoes in a large pot of boiling water until tender, but firm.
  2. Drain and then set aside to cool.
  3. Heat oil in a skillet.  Add onions and cook until soft.
  4. Stir in eggs, potatoes, ham, pepper and cook until eggs are firm on the bottom.
  5. Top frittata with shredded cheese.
