Bread Pudding

Ingredients

  1. 2 cups skim or one percent milk
  2. 1 cup buttermilk*
  3. 1 1/2 cups egg mix combined with 4 cups water
  4. 1 cup, 1 teaspoon sugar
  5. 1/4 teaspoon vanilla
  6. 6 slices whole wheat bread
  7. 1/2 teaspoon cinnamon
  8. 1/2 cup raisins

Directions

Preheat oven to 400°
  1. Combine milk, buttermilk, egg mixture, 1 cup sugar and vanilla; mix well.
  2. Arrange bread on the bottom of a 9 x 13 inch pan. Pour mixture over bread.
  3. Mix cinnamon with 1 teaspoon sugar, sprinkle over everything and distribute raisins evenly on top.
  4. Cover with foil and place pan in a water bath.**
  5. Bake 75-90 minutes or until set in the middle.
*If you don't have buttermilk, you can make your own by combining 1 cup skim milk or one percent milk and 1 tablespoon vinegar or 1 tablespoon lemon juice.

**The water bath is made by putting a larger pan in the oven and then putting your prepared dish in this larger pan. Place water in the larger pan to prevent the bottom of the bread pudding from scorching.
