Beef Stroganoff

Ingredients

  1. 1 Tablespoon vegetable oil
  2. onion, chopped
  3. 1 (6.5 oz) can mushrooms, drained and rinsed
  4. 2 Tablespoons flour
  5. 1/4 teaspoon garlic powder
  6. 1/8 teaspoon pepper
  7. 1/3 cup water
  8. 1 teaspoon low-sodium beef bouillon granules
  9. 1 cup non-fat plain yogurt
  10. 2 cups sliced beef, cooked
  11. 2 cups egg noodles, cooked

Directions

  1. In a large skillet, heat oil and saute the onions and mushrooms.
  2. Stir in flour, garlic powder and pepper.
  3. Stir in water, beef bouillon and yogurt.
  4. Simmer 12-15 minutes.
  5. Add beef.  Heat through.
  6. Serve over noodles.
You can use fresh mushrooms to reduce the sodium in this recipe.

To make this a quick meal, use leftover beef or cook in advance and refrigerate until ready to use.
