Ingredients
- 1/4 cup vegetable oil
- 6 cups canned mixed vegetables, low sodium, drained and rinsed (may substitute 6 cups of Soup Mix)
- 1 can diced tomatoes, low sodium
- 2 pounds beef roast, cubed
- 10 cups water
- pepper to taste
Directions
- Brown beef cubes in oil.
- Add water and pepper for seasoning.
- Simmer slowly until meat is tender.
- Add vegetables.
- Cook for 30 minutes or until vegetables are done.
Meal number two; with a salad and a piece of fruit this meal will be on the table before you know it.
