Ingredients

  1. 1/4 cup vegetable oil
  2. 6 cups canned mixed vegetables, low sodium, drained and rinsed (may substitute 6 cups of Soup Mix)
  3. 1 can diced tomatoes, low sodium
  4. 2 pounds beef roast, cubed
  5. 10 cups water
  6. pepper to taste

Directions

  1. Brown beef cubes in oil.
  2. Add water and pepper for seasoning.
  3. Simmer slowly until meat is tender.
  4. Add vegetables.
  5. Cook for 30 minutes or until vegetables are done.
Meal number two; with a salad and a piece of fruit this meal will be on the table before you know it.
