Ingredients
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 5 tablespoons buttery spread, divided
- 3/4 cup egg mix combined with 1 1/2 cups water
- 10 unsalted top saltine crackers, crushed
- 1 teaspoon pepper
Directions
Preheat oven to 375°
- In a small saucepan, sauté onion and green pepper in 3 tablespoons of buttery spread until tender.
- Transfer to an 8 x 8 in baking dish sprayed with non-stick cooking spray.
- Pour egg mixture over the onion mixture.
- Melt remaining buttery spread; toss with crushed cracker crumbs and pepper.
- Sprinkle buttery spread and cracker crumbs over egg mixture.
- Bake, uncovered, for 12-15 minutes or until the eggs are firm.
Try substituting oats for cracker crumbs and top with salsa to add additional flavor.
