Applesauce Raisin Bars

Ingredients

  1. 1 1/2 cups flour
  2. 1 teaspoon baking soda
  3. 1/2 teaspoon cinnamon
  4. 1/2 teaspoon nutmeg
  5. 1/2 cup vegetable oil
  6. 1 cup sugar
  7. 2 tablespoons egg mix combined with 1/4 cup water
  8. 1 cup unsweetened applesauce
  9. 1/2 cup raisins

Directions

Preheat oven to 350°
  1. Sift flour, soda, cinnamon and nutmeg into a bowl; set aside.
  2. In separate bowl, mix vegetable oil and sugar.
  3. Add egg mixture and beat until light and fluffy.
  4. Gradually add oil mixture and applesauce to flour mixture alternating the oil and applesauce.  Add raisins; mix well.
  5. Spread mixture into a 9 x 13 inch baking pan sprayed with a non-stick cooking spray.
  6. Bake 25-30 minutes or until done. Cut while warm.
Wrap individual bars in plastic wrap for a lunch box treat.
