Ingredients
- 3/4 cup oats
- 1/2 cup flour
- 1/8 teaspoon cinnamon
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 cup skim or one percent milk
- 1/4 cup packed light brown sugar
- 1/2 cup unsweetened applesauce
- 2 tablespoons egg mix combined with 1/4 cup water
- 2 tablespoons oats
- 1 1/4 teaspoons cinnamon
- 1 1/2 teaspoons buttery spread, melted
- 2 tablespoons packed light brown sugar
Directions
Preheat oven to 400°
- Mix oats, flour, baking powder, baking soda and cinnamon in a bowl; set aside.
- In a separate, large mixing bowl, mix brown sugar, egg mixture, applesauce and milk until smooth.
- Stir the flour mixture into the applesauce until moistened. There will be a few lumps remaining.
- Pour batter into a muffin pan sprayed with non-stick cooking spray.
- Prepare topping and sprinkle on top of muffins.
- TOPPING: Stir oats, brown sugar, cinnamon and buttery spread in a bowl.
- Bake 20 minutes.
Double your batch and freeze half. Take this healthy muffin to a bake sale.
