Applesauce Oat Muffins

Ingredients

  1. 3/4 cup oats
  2. 1/2 cup flour
  3. 1/8 teaspoon cinnamon
  4. 1/4 teaspoon baking soda
  5. 1/2 teaspoon baking powder
  6. 1/4 cup skim or one percent milk
  7. 1/4 cup packed light brown sugar
  8. 1/2 cup unsweetened applesauce
  9. 2 tablespoons egg mix combined with 1/4 cup water
  10. 2 tablespoons oats
  11. 1 1/4 teaspoons cinnamon
  12. 1 1/2 teaspoons buttery spread, melted
  13. 2 tablespoons packed light brown sugar

Directions

Preheat oven to 400°
  1. Mix oats, flour, baking powder, baking soda and cinnamon in a bowl; set aside.
  2. In a separate, large mixing bowl, mix brown sugar, egg mixture, applesauce and milk until smooth.
  3. Stir the flour mixture into the applesauce until moistened. There will be a few lumps remaining.
  4. Pour batter into a muffin pan sprayed with non-stick cooking spray. 
  5. Prepare topping and sprinkle on top of muffins.
  6. TOPPING:  Stir oats, brown sugar, cinnamon and buttery spread in a bowl.
  7. Bake 20 minutes.
Double your batch and freeze half. Take this healthy muffin to a bake sale.
