Ingredients
- 1 1/2 cups flour
- 1/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup sugar
- 1 1/4 teaspoons baking powder
- 1/2 cup light brown sugar
- 1 1/4 cups unsweetened applesauce
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- 2 tablespoons egg mix combined with 1/4 cup water
Directions
Preheat oven to 350°
- Coat a 9 X 13 inch pan with non-stick cooking spray and dust with 1 tablespoon of flour.
- Combine flour, baking powder, baking soda, cinnamon and nutmeg in a large mixing bowl. Mix well.
- Combine sugars, egg mixture, applesauce, oil and vanilla in separate bowl. Mix into the flour mixture until combined. Stir in raisins.
- Bake 30-35 minutes or until done.
The smell of this breakfast cake baking will get everyone out of bed early.
