Applesauce Breakfast Cake

Ingredients

  1. 1 1/2 cups flour
  2. 1/4 teaspoon baking soda
  3. 1 teaspoon cinnamon
  4. 1/2 teaspoon nutmeg
  5. 1/2 cup sugar
  6. 1 1/4 teaspoons baking powder
  7. 1/2 cup light brown sugar
  8. 1 1/4 cups unsweetened applesauce
  9. 1/4 cup vegetable oil
  10. 1 teaspoon vanilla extract
  11. 1/2 cup raisins
  12. 2 tablespoons egg mix combined with 1/4 cup water

Directions

Preheat oven to  350°
  1. Coat a 9 X 13 inch pan with non-stick cooking spray and dust with 1 tablespoon of flour.
  2. Combine flour, baking powder, baking soda, cinnamon and nutmeg in a large mixing bowl. Mix well.
  3. Combine sugars, egg mixture, applesauce, oil and vanilla in separate bowl. Mix into the flour mixture until combined. Stir in raisins.
  4. Bake 30-35 minutes or until done.
The smell of this breakfast cake baking will get everyone out of bed early.

Make extra in muffin pans and freeze for after school snacks.
