Ingredients

  1. 1 1/2 cups flour
  2. 2 teaspoons baking powder
  3. 1/4 teaspoon baking soda
  4. 1 1/4 teaspoons ground cinnamon
  5. 1/4 teaspoon ground nutmeg
  6. 2/3 cup light brown sugar, packed
  7. 1 cup rolled oats
  8. 1 1/2 cups grated apples
  9. 1/4 cup peanuts, chopped
  10. 1/4 cup raisins
  11. 1/4 cup egg mix combined with 1/2 cup water
  12. 1/4 cup skim or one percent milk
  13. 1/4 cup vegetable oil

Directions

Preheat oven to 350°
  1. In a large bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, brown sugar and oats.
  2. In a medium bowl, add apple, nuts, raisins, egg mixture, milk and oil. Mix both bowls together until dry ingredients are moistened.
  3. Spoon into a loaf pan sprayed with non-stick cooking spray.
  4. Bake for 55-60 minutes.
Try substituting pears for the apples. Spoon batter into a muffin pan for a grab-n-go breakfast.
