Ingredients
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 1/4 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2/3 cup light brown sugar, packed
- 1 cup rolled oats
- 1 1/2 cups grated apples
- 1/4 cup peanuts, chopped
- 1/4 cup raisins
- 1/4 cup egg mix combined with 1/2 cup water
- 1/4 cup skim or one percent milk
- 1/4 cup vegetable oil
Directions
Preheat oven to 350°
- In a large bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, brown sugar and oats.
- In a medium bowl, add apple, nuts, raisins, egg mixture, milk and oil. Mix both bowls together until dry ingredients are moistened.
- Spoon into a loaf pan sprayed with non-stick cooking spray.
- Bake for 55-60 minutes.
Try substituting pears for the apples. Spoon batter into a muffin pan for a grab-n-go breakfast.
