Ingredients
- 3/4 cup egg mix with 1 1/2 cups of skim or one percent milk
- 1 teaspoon vanilla extract
- 1 cup flour
- 3 tablespoons sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons buttery spread
- 2 apples (peeled, cored and sliced)
- 3 tablespoons light brown sugar
Directions
Preheat oven to 425°
- In a large bowl, mix egg mixture with milk, add vanilla.
- Add flour, sugar and cinnamon; mix just until blended, set aside.
- Melt buttery spread. Coat a 9 x 9 inch square pan with spread.
- Arrange apple slices in the bottom of the pan, and pour the batter over them.
- Sprinkle brown sugar over the top.
- Bake for 40 minutes in the oven or until puffed and lightly browned.
Pair this treat with honeydew melon or warm oatmeal.
