Apple Puff Breakfast Treat

Ingredients

  1. 3/4 cup egg mix with 1 1/2 cups of skim or one percent milk
  2. 1 teaspoon vanilla extract
  3. 1 cup flour
  4. 3 tablespoons sugar
  5. 1/4 teaspoon ground cinnamon
  6. 2 tablespoons buttery spread
  7. apples (peeled, cored and sliced)
  8. 3 tablespoons light brown sugar

Directions

Preheat oven to 425°
  1. In a large bowl, mix egg mixture with milk, add vanilla.
  2. Add flour, sugar and cinnamon; mix just until blended, set aside.
  3. Melt buttery spread. Coat a 9 x 9 inch square pan with spread.
  4. Arrange apple slices in the bottom of the pan, and pour the batter over them.
  5. Sprinkle brown sugar over the top.
  6. Bake for 40 minutes in the oven or until puffed and lightly browned. 
Pair this treat with honeydew melon or warm oatmeal.

Great protein packed breakfast.
