Apple Coffee Cake

Ingredients

  1. 5 cups tart apples, cored, peeled and chopped
  2. 1 cup sugar
  3. 1 cup raisins
  4. 1/2 cup chopped peanuts
  5. 1/4 cup vegetable oil
  6. 2 teaspoons vanilla
  7. 2 tablespoons egg mix combined with 1/4 cup water
  8. 2 1/2 cups flour
  9. 1 1/2 teaspoons baking soda
  10. 2 teaspoons ground cinnamon

Directions

Preheat oven to 350°
  1. In a large mixing bowl, combine apples with sugar, raisins and peanuts; mix well. Let stand 5 minutes.
  2. Stir in oil, vanilla and egg mixture. Sift together flour, baking soda and cinnamon; stir into apple mixture about 1/3 at a time, just enough to moisten dry ingredients.
  3. Turn batter into a 9 x 13 inch baking pan sprayed with non-stick cooking spray.
  4. Bake 35-40 minutes. 
Granny Smith or Braeburn apples are considered to be tart apples.

For a darker crust, use a metal pan.
