Ingredients
- 5 cups tart apples, cored, peeled and chopped
- 1 cup sugar
- 1 cup raisins
- 1/2 cup chopped peanuts
- 1/4 cup vegetable oil
- 2 teaspoons vanilla
- 2 tablespoons egg mix combined with 1/4 cup water
- 2 1/2 cups flour
- 1 1/2 teaspoons baking soda
- 2 teaspoons ground cinnamon
Directions
Preheat oven to 350°
- In a large mixing bowl, combine apples with sugar, raisins and peanuts; mix well. Let stand 5 minutes.
- Stir in oil, vanilla and egg mixture. Sift together flour, baking soda and cinnamon; stir into apple mixture about 1/3 at a time, just enough to moisten dry ingredients.
- Turn batter into a 9 x 13 inch baking pan sprayed with non-stick cooking spray.
- Bake 35-40 minutes.
Granny Smith or Braeburn apples are considered to be tart apples.
For a darker crust, use a metal pan.
