Ingredients
- 1 1/4 cups sugar
- 1/4 cup vegetable oil
- 1/4 cup egg mix combined with 1/2 cup water
- 2 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 4 cups Granny Smith apple chunks, diced
- 1/4 cup unsweetened applesauce
Directions
Preheat oven to 350°
- In a large bowl, mix sugar, oil and egg mixture together; beat well.
- In a separate bowl, combine flour, cinnamon and baking soda.
- Add egg mixture to flour mixture and mix well.
- Add apple chunks and applesauce to the batter. Stir to combine.
- Spray a 9 x 13 inch baking pan with non-stick cooking spray, and pour in batter.
- Bake until done, about 1 hour.
Leave the peel on the apples to save time and to increase fiber. Any apple can be used if Granny Smith apples are not available.
