  1. potatoes, washed and scrubbed
  2. 1 cup fresh or frozen broccoli, cooked and chopped, may substitute 1 cup of other cooked vegetables
  3. 1/2 cup salsa


  1. Place potatoes on a baking sheet and bake until tender for 45-60 minutes.
  2. Cut open the top of the potato, and fill with cooked vegetables.
  3. Cover with salsa.
Diabetics should eat half of the potato.
