Twice Baked Potatoes

6, half potato servings


  1. large baking potatoes
  2. 1 container (16 oz) non-fat sour cream
  3. 1/4 cup cheese, grated
  4. 3/4 cup buttery spread
  5. black pepper to taste


Preheat oven to 350°
  1. Bake potatoes for 1 hour or until soft. 
  2. Cut enough of the skin off the top of each potato to be able to scoop the potato out of the skin and into a mixing bowl.
  3. Add buttery spread, sour cream and grated cheese.  Mix together well.  Add pepper to taste.
  4. Fill the potato skins with the mix and top with grated cheese.
  5. Bake for 10-15 minutes or until heated through.
  6. Cut each potato in half before serving. 
Microwaving the potatoes will speed up cooking time.
