Tasty Garlic Sauce

  1. 1 3/4 cups garlic cloves, peeled
  2. 2 cups olive oil
  3. 1/2 cup lime juice, freshly squeezed


  1. Place garlic cloves in a sealed plastic bag and roll with a rolling pin to mash.
  2. Stir together garlic and oil in an 8 x 8 inch baking dish. Make sure all garlic is covered with oil. 
  3. Bake about 45 minutes until the garlic is soft and light brown.
  4. Add lime juice and return to oven for 20 minutes.
  5. Mash the garlic into a coarse puree. Pour the mixture into a wide-mouth storage container.
  6. Refrigerate and use as needed for up to 3 months.
This sauce is great for basting chicken, roast, grilled vegetables and more.

Also a great dipping sauce for the Rosemary Bread recipe.
