Speedy Baked Sweet Potatoes

  1. sweet potatoes, fresh, scrubbed
  2. 1/4 cup brown sugar
  3. 2 tablespoons buttery spread


Preheat oven to 375°
  1. Pierce potatoes with a fork, microwave until soft.  Peel and slice potatoes.
  2. Spray a baking dish with non-stick cooking spray.
  3. Arrange in prepared baking dish.
  4. Top with brown sugar and buttery spread.
  5. Bake for 15 minutes or until buttery spread melts. 
Lightly dust cinnamon on top before baking as a brown sugar substitute to help lower calories and carbohydrates.

Sweet potatoes are a great source of Vitamin A, which helps with eye health.
